You know what I mean, it happens when you add the egg yolks. One moment there's silky chocolate, the next it's big old lumps of cocoa rock. Oh the angst!
Which is why we suggest going for a pre-made version: skip the egg mixture all together and try a giant, fuzzy, Chocolate Moose. His fur and stuffing might taste different from what you guests were expecting, but there's a lot of him. Yes, this decadent substitute is adorable, eminently huggable, and big enough to ride on. Try *that* with a gooey souffle.
